Zucchini Ginger Cupcakes

Looking for an unusual dessert that is scrumptious yet not too sweet? This is that very special treat.

The key ingredient here is the crystallized ginger. These days you can find it at most large grocery stores. If not, you will definitely find it in a small specialty food store.

Zucchini Ginger Cupcakes

CUPCAKE INGREDIENTS

  • 1/3 cup (1 3/4 oz) crystallized ginger, coarsely chopped
  • 2 cups all-purpose flour
  • 1/2 teaspoon ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon finely grated orange zest
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 cups coarsely grated zucchini (about 2 medium)
  • 3/4 cup mild olive oil
  • 3/4 cup honey
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla

FROSTING INGREDIENTS

  • 8 ounce cream cheese, room temperature
  • 2 tablespoons unsalted butter
  • 1/2 confectioners sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon finely grated orange zest

Place oven rack in the middle position and preheat to 350 F. Line 18 muffin cups with liners.

In a food processor pulse crystallized ginger until finely ground, then add flour, ground ginger, cinnamon, zest, salt, baking soda and baking powder. Pulse until combined.

In a medium bowl, mix together zucchini, oil, honey, eggs, and vanilla. Then stir in flour mixture until just combined.

Divide the batter among the muffin cups and bake until golden and an inserted toothpick comes out clean, about 20-24 minutes.

Cool in pan on a rack for 10 minutes then remove from pan and cool completely for at least 1 hour before frosting.

THE FROSTING

Beat together all ingredients with an electric mixer at high speed until well combined and fluffy, about 3-5 minutes. Frosting can be spread with a knife or made to look “fancy” with a piping bag.

Top with a few nuggets finely diced crystallized ginger, if you desire.
